What is Dutch Cocoa? 

During the 18th Century, the Dutch controlled virtually all of the cocoa trade, and Amsterdam developed into the one of the most important ports of the trade of cocoa. The Dutch also established initiatives for the processing of cocoa that are still in place today. Chemist Coenraad Van Houten invented a press that removes the fat from cocoa pods thus the creation of dutch cocoa. He also invented a way to treat the cocoa with alkaline salts that removed the bitter flavor and made the cocoa more water-soluble, this is the process known as “Dutch Process Chocolate”.
